Ingredients
- 2 cobs of corn - uncooked
- 1 1/2 cups of cherry tomatoes – sliced in half
- 1/4 cup red onion – thinly sliced
- 1/2 cup fresh basil – finely chopped
- 1/2 teaspoon sea salt
Use Metric 1 Serving
Recipe Directions
- 1. Cut the kernels off the corn cobs. Place in bowl.
- 2. Add remaining ingredients to the bowl.
- 3. Mix gently and serve!

I absolutely love eating fresh raw corn sliced straight off the cob. (Remove peel, snap corn cob in half with your hands, place vertically on cutting board and slice downwards.) Yum!
Like most salads, this recipe does not keep well so eat up right away!

This is AMAZING! We just started eating RAW 2 days ago and this was the first thing we made. My husband and I couldn't believe that there was no dressing added. This is seriously the BEST salad I have ever had. My 1 year old and 2 year old boys cleaned their plate... and they usually aren't too found of veggies. My 2 year old kept asking for more. Thank you! Thank you! Thank you! Your website has given me so many great ideas. P.S. The family also loves the brownie and apple pie!!!

I really like this recipe when I serve it with the raw taco meat on top of it, and with a raw juice or grapes and oranges. It's perfect for lunch! Eating it right now. So good. I wish I had time to make a fresh salsa to go with it too. :)

I am new to the raw diet, so I decided to come here and look at a few of rawtarian recipes. (I made her ketchup a while ago and I never forgot how great it was!) Anyway I made this last night for dinner and my goodness! This was simple and very flavorful. Such a great recipe. Thank you and this one goes in the rotation!

Very fresh and tasty dish! I added some lemon juice and it kept very fresh after 7 hours. Im going to add avocado next time as Im sure it'll be great on it.

Hmm... fresh is best. In some recipes I would recommend canned corn in a pinch, but not so much in this recipe since it's so fresh and not blended or anything.
Perhaps go for some fresh, sliced sweet yellow bell peppers instead!

I enjoyed this salad a lot. I love foods that taste so fresh, and this one does. I made 1 change, I used cilantro instead of parsley. After all it is called fiesta OLE!.

I found this exact recipe in *Uncooking with RawRose" who said it came from Patrick Dubois of Vancouver. She called it a Rainbow Salad. I actually got this "uncook" book from my DIL who knows Rose (she goes to my DIL's Zumba class) and her copy was given to her by Rose herself and signed. How nice! :)
